Honey Pork Chops, or Grilled pork in a honey glaze.

From roasting to grilling and beyond, using honey in a recipe adds flavour and locks in moisture. One of the most common ways to use honey is to create a glaze or sauce for meat. This recipe for pork chops with honey and crushed garlic for extra flavour. It is quick and easy to make without much prep time. What's more, it uses ingredients you most likely already have in your pantry.

A great advantage is the simplicity of this recipe. There is no need for marinating – what a relief. So many times I need a quick meal, and then I see that I should have planned ahead. No worries, this sweet garlic glaze stays on during cooking. I prefer to do them on the grill because of the crispy, caramelised coating that tastes so good. However, you can pan-fry them in your favourite pan or bake the pork chops instead.

Regardless of the chosen cooking method, cook/bake until the meat is ready. Remember to use a meat thermometer to reach an internal temperature of 62° C, in this way you will avoid overcooking.

  • 3 pork chops 
  • 1/8 cup ketchup
  • 2 tbsp honey
  • 2 tsp soy sauce
  • 1 tsp crushed garlic
  • 1/2 tsp dried parsley
  • 1 tbsp vegetable oil
  • salt and pepper to taste

Additional equipment:

  • Basting brush
  • Meat thermometer

 

2. Important notes regarding pork, honey, and garlic:

Pork Chops: The recipe works well for bone-in or boneless chops. My family prefers bone-in, so I use pork loin. But pork loin end cuts will also taste delicious.

When cooking this type of meat – always remember to rinse it first. Rinse the meat and pat dry before cooking/baking. Sometimes there may be small bone fragments on the surface. A good rinse removes them. If the chop has a lot of excess fat – it is good to trim it off.

 

Honey: What are the best types of honey for cooking? I am not sure if there is a best one. It is produced by honey bees and comes in many different varieties. The taste and colour of honey change depending on the source of nectar collected by the bees.

In my opinion, however, it is important that even in cooking I prefer to use raw honey. Yes, even though we are heating it – I enjoy the purity of using raw straight from the hive whenever possible. Multiflower honey, buckwheat honey, linden honey, rapeseed honey, honeydew honey- these are several varieties of honey to consider.

Garlic: Adding a bit of crushed garlic in our recipe for grilled pork chops elevates the flavour. If you are not a fan, you can skip the garlic. Add a little though – you might not even notice it, but the overall flavour will be enhanced.

You can buy crushed garlic ready to use. I prefer to buy garlic cloves and crush only as much as needed for recipes.

 

3. Instructions for preparing grilled pork loin:

  • Rinse the pork chops under running water and pat dry. Rub a thin layer of vegetable oil on each side and sprinkle with salt, pepper, and dried parsley.
  • In a small bowl, mix the ketchup, honey, soy sauce, and crushed garlic. Use a whisk to gently mix the ingredients well. Set aside.
  • Preheat the grill over medium heat with a lightly oiled grate. Place the pork chops on the grill and brush the honey-garlic glaze on top.
  • Sear for 1 minute or until the meat releases easily from the grate.
  • Flip and sear the other side, applying the honey glaze to the top.
  • Close the grill lid. Cook the pork chops for 5-6 minutes per side. Baste them with additional glaze throughout the cooking time.
  • Rub a thin layer of vegetable oil on each side and sprinkle with salt, pepper, and dried parsley.
  • When they reach an internal temperature of 62 ° C on a meat thermometer, they are ready. Remove from the grill and let rest for a few minutes.

 

  1. It is always a good idea to rinse pork chops before cooking. Rinse under cold water and pat dry with a paper towel. Rub some oil into them and set aside.
  2. Now mix the liquids and seasonings in a small bowl and stir until combined.
  3. Place the chops on the preheated grill and baste with the mixture. Cook until they reach the appropriate internal temperature (62 ° C). Turn them several times during cooking and brush the basting mixture on top of the pork chop each time.

Once thoroughly cooked, remove the pork chops from the grill and let rest for a few minutes. This is also a good time to clean up any cooking residue left on the grill. Try to avoid flipping the meat too often (it's a bad habit of mine).

 

4. Additional notes on overcooking pork:

Use a meat thermometer to know when they are ready, as pork tends to overcook and dry out

They are great for reheating – just add a few tablespoons of honey/water to the pan and heat in the oven.
