Bees collect nectar from flowers and already during transport to the hive begin to transform it — they introduce enzymes into it (mainly invertase), which break down complex sugars into simple sugars: glucose and fructose. After being brought to the hive, the bees repeatedly pass the nectar between themselves, further enriching it with enzymes and gradually evaporating the water from it. This makes the honey stable and thick.

In terms of composition, honey is about 70-80% precisely these natural sugars: glucose and fructose, which are the basic source of energy for humans. Glucose is absorbed directly into the bloodstream, providing almost immediate "fuel" for the muscles and brain. Fructose, on the other hand, is metabolised somewhat more slowly in the liver, which means that the energy from honey is released both quickly and over a slightly longer period.
