4. Why add honey to dressings?
1. A delicate feast of flavours – classic honey-mustard dressing
This dressing is a subtle combination of a gently sweet flavour – perfect for a salad with grilled chicken, rocket or lamb's lettuce.
Ingredients:
- 3 tablespoons water
- 3 tablespoons olive oil
- 1 teaspoon honey mustard
- 2 teaspoons rapeseed honey
- 1 clove of garlic (grated or pressed through a garlic press)
- a few drops of lemon juice
- salt and freshly ground pepper to taste
Method:
Mix all ingredients thoroughly in a bowl or a small jar with a lid. The dressing tastes best chilled – store it in the fridge for a maximum of 2 days.

2. For fans of spicier flavours – dressing with buckwheat honey and sriracha
Perfect for those who like bold accents and a touch of spiciness. It works great with a roasted vegetable salad or a salad that has a slightly bland taste.
Ingredients:
- 3 tablespoons water
- 2 tablespoons olive oil
- 2 tablespoons buckwheat honey
- 1 teaspoon sriracha hot sauce
- 0.5 teaspoon wholegrain mustard
- salt and pepper to taste
- a few grains of hot pepper (e.g. chili or cayenne pepper)
Method:
Mix all ingredients until a uniform consistency is achieved. For a more intense flavour – add more sriracha or hot pepper.

3. For lovers of bold notes – dressing with sun-dried tomatoes and basil
This dressing is a true explosion of flavours inspired by Italian cuisine. The aroma of basil, the sweetness of linden honey and parmesan cheese create a harmonious whole. Perfect for salads with mozzarella, pasta or fresh spinach.
Ingredients:
- 3 tablespoons water
- 3 tablespoons oil from sun-dried tomatoes
- 1 clove of garlic
- 1 teaspoon linden honey
- 1 tablespoon balsamic glaze
- 1 tablespoon yoghurt
- a few fresh basil leaves (finely chopped)
- grated parmesan cheese (amount to taste)
Method:
Mix everything thoroughly – if you want a smoother consistency, you can blend the dressing. Serve immediately or store in the fridge for up to 24h.
4. Why add honey to dressings?
Natural honey is much more than just a healthy alternative to sugar. In the kitchen – especially when preparing salad dressings – it plays a unique role: it balances flavours, adds depth and makes even the simplest dressing more distinct and harmonious. The sweetness of honey mellows sharp notes, breaks the acidity of vinegar or lemon and subtly highlights the natural taste of vegetables.
Importantly, every type of honey has its own character, so it's worth choosing it depending on the style of the dish.
Rapeseed Honey – has a delicate, slightly buttery taste and a creamy consistency. It pairs perfectly with mild ingredients such as butter lettuce, cucumber, avocado or boiled eggs. It is an excellent choice for everyday, light salads.
Buckwheat Honey – is characterised by an intense, slightly spicy aroma and a darker colour. It fits perfectly with spicier compositions – e.g. with rocket, chili, roasted vegetables or in salads with the addition of blue cheeses. It adds character and depth even to the simplest ingredients.
Linden Honey – subtle, with a delicate hint of bitterness. It works perfectly in combination with herbs (e.g. basil, oregano), sun-dried tomatoes, olives and parmesan. It's a great choice for salads inspired by Mediterranean cuisine.
In addition to its taste qualities, honey is also a source of valuable nutrients – enzymes, antioxidants and vitamins. It is therefore worth including it in your daily menu not only for its taste but also for your health.
Experiment, mix and create your own dressings with the addition of honey – and your spring salads will gain a completely new dimension!
It's worth emphasising that spring is the perfect moment to fall in love again with simple, natural flavours. Salads don't have to be boring – just a bit of creativity and a well-chosen dressing are enough for a true culinary feast to appear on your plate. Honey, as an ingredient in homemade dressings, not only enhances the flavour but also brings something more to everyday cooking – authenticity, health and natural sweetness.
You can freely modify each of the presented recipes – by changing the proportions, adding your favourite spices or herbs. It's a great way to discover your own favourite flavour combinations and experiment with what nature gives us. Reach for fresh ingredients, play with textures and don't be afraid to combine seemingly non-obvious products – like hot sriracha with buckwheat honey or sun-dried tomatoes with parmesan and linden honey.
